Low-Carb Stuffed Zucchini Boats

I used them in stir-fry, pasta, and simply sautéed them with salt and pepper, but my favorite use so far has been these awesome stuffed zucchini boats. With this recipe, you get all the deliciousness and comfort of a hearty, homemade meal with less guilt.
