5-Minute 3 Bean Salad

Ingredients
  

  • 3 Tbsp White Wine Vinegar
  • 5 Tbsp Olive Oil
  • 1 Tbsp Honey
  • 1 tsp Dijon Mustard
  • tsp Salt
  • Cracked Pepper to taste
  • 1 can Chickpeas drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 1 can Pinto Beans drained and rinsed
  • 1 Cucumber chopped, about 2 cups
  • ½ Red or Sweet Onion minced, about ½ cup, optional
  • ½ tsp Italian Seasoning
  • 4 oz Feta crumbled, optional

Method
 

  1. In a small bowl or jar, add white wine vinegar, oil, honey, Dijon mustard, salt, and pepper and stir or shake until combined. Set aside.
  2. In a large mixing bowl, add chickpeas, black beans, pinto beans, cucumber, onions, Italian seasoning, and prepared dressing. Stir until completely combined and coated.
  3. Serve evenly in bowls and top with Feta, if desired. Enjoy!
