Bean and Cheese Skillet

Ingredients
  

  • 2 cups Black Beans cooked (or 1 can Black Beans, drained and rinsed)
  • 10 oz Frozen Corn or 1 can corn, drained
  • 1 Tbsp Taco Seasoning
  • 1 cup Rice
  • 4 oz Cheddar shredded

Method
 

  1. Cook rice according to the package and set aside.
  2. Meanwhile, heat a large pan on medium heat and add beans, corn, and taco seasoning. Stir and continue to cook until beans and corn and cooked through, about 5-8 minutes. Add ΒΌ cup of water and allow to simmer until thickened.
  3. Separate rice evenly into 4 bowls, top evenly with corn and bean mixture, top with cheese, and serve.
