Total Time 1 hour 5 minutes
Servings: 8 Servings
Course: dinner

Ingredients

  • 2 Tbsp Oil
  • 1 Yellow Onion diced
  • 2 Bell Peppers diced (any color)
  • 2 cloves Garlic minced
  • 2 cups Black Beans cooked (or 1 can Black Beans)
  • ½ cup Lentils dry
  • 1 28oz can Crushed Tomatoes
  • 1 cup water
  • 2 Tbsp Brown Sugar
  • 2 tsp Yellow Mustard
  • 8 Buns
  • Sliced Cheddar

Method

  1. In a large pan, heat oil over medium heat. Add onions and sauté for 2-3 minutes.
  2. Add bell peppers and continue to cook for about 3-4 minutes more. Add garlic and sauté unlit fragrant, about 30 more seconds.
  3. Stir in black beans, lentils, crushed tomatoes, water, brown sugar, and yellow mustard. Bring to a boil, reduce the heat, cover, and simmer for 30-35 minutes or until lentils are cooked through (this may take a bit longer due to cooking in tomato, so continue to cook until soft and cooked through)
  4. Uncover and continue to cook until reduced to desired consistency, about 10-15 minutes more.
  5. Serve on buns, topped with cheese, onions, or any toppings you like! Enjoy!
