- In a large pot, heat olive oil over medium heat. Add onions and saute until soft and translucent, about 3-4 minutes.
- Add chicken broth, milk, and cottage cheese and stir to combine. Stir in salt, pepper, and garlic powder. Bring to a simmer and then add broccoli. Cook for about 3-4 minutes or until broccoli is tender.
- Turn off the heat and add mozzarella or cheddar cheese, stirring until melted. Season with more salt, pepper, and garlic powder to taste. Serve and enjoy!
Notes
For a creamier soup, carefully blend half of the soup before adding the cheese.
