Cheesy Ham and Broccoli Cornbread

Ingredients
  

  • 2 Tbsp Butter
  • 2 Eggs
  • 1 cup Milk
  • ½ cup Greek Yogurt or Sour Cream
  • 2 8.5 oz boxes Cornbread Muffin Mix
  • 10 oz Frozen or Fresh Broccoli chopped, about 2 cups
  • ½ cup Cheddar Cheese shredded
  • 1 cup Cooked Ham chopped
  • 3 Green Onions sliced

Method
 

  1. Preheat oven to 375 degrees F and place a large cast iron skillet or oven safe pan on the middle rack. Once warmed, place butter in the pan and allow to melt
  2. Meanwhile, in a large mixing bowl, beat together the eggs, milk, and Greek yogurt until combined. Stir in the cornbread mix until combined.
  3. Fold in the broccoli, ham, and cheese until incorporated. Remove the pan with melted butter and carefully pour cornbread and ham mixture into the pan. Bake in the oven until golden brown and a toothpick comes out clean, about 35-40 minutes.
  4. Let rest for 10-15 minutes, serve and enjoy!
