Method
- Heat a large pan on medium heat and add oil. Add onions, broccoli, and cooked chicken and saute, stirring occasionally, until heated through. Remove to a bowl and set aside.
- Add one tablespoon of oil to the pan and add tortilla. Add ¼ of the shredded cheese to half of the tortilla and top with ¼ of the chicken mixture. Fold the tortilla over the filling and allow to brown on one side. Once brown and crispy, flip, and brown on the other side. Cook the other 3 quesadillas the same way. Serve with optional toppings and enjoy!
