Chicken and Quinoa Bowls

Ingredients
  

  • Olive oil
  • 1/2 cup Onion diced
  • 1/2 tsp Garlic Powder
  • 1/2 cup Chopped or Shredded Chicken cooked
  • 1 can Diced Tomatoes or 1 cup Fresh Tomatoes, diced
  • 1 can Corn drained (or 2 cups frozen)
  • 1 can Black Beans or Chili Beans drained and rinsed
  • 1 Cup Quinoa cooked
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • Fresh Lime Juice 1/2 lime
  • Shredded Cheese
  • Avocado

Method
 

  1. In a medium sauce pan, heat olive oil on medium-high heat. Sauté onions until translucent, then add garlic powder and sauté for 30 seconds more or until fragrant. Add chicken and stir.
  2. Add tomatoes, corn, beans, cumin, chili powder, lime juice, and quinoa and heat until bubbly and cooked through. Serve with shredded cheese and avocado (optional).
