- In a medium sauce pan, heat olive oil on medium-high heat. Sauté onions until translucent, then add garlic powder and sauté for 30 seconds more or until fragrant. Add chicken and stir.
- Add tomatoes, corn, beans, cumin, chili powder, lime juice, and quinoa and heat until bubbly and cooked through. Serve with shredded cheese and avocado (optional).
