Chicken Penne

Ingredients
  

  • 1 lb Pasta any kind
  • Oil
  • 3 cloves Garlic minced
  • 5 Roma Tomatoes diced
  • Salt
  • Pepper
  • Italian Seasoning Optional
  • 1 cup Cooked Chicken
  • 1 cup Spinach Optional

Method
 

  1. In a large pan, heat oil over medium heat. Add garlic and saute until fragrant, about 30 seconds. Add cooked chicken, tomatoes and season with salt, pepper, and Italian seasoning. Bring to a boil, reduce the heat and simmer for 10 minutes or until tomatoes are reduced about half.
  2. Meanwhile, cook pasta as directed on the packaging and save about 1 cup of pasta water.
  3. Add spinach to the tomatoes and simmer until spinach is wilted, about 2 minutes.
  4. Stir in pasta. Add pasta water, a few tablespoons at a time, until your sauce has reached the desired consistency. Serve and Enjoy!
