Chickpea Pasta Marinara

Ingredients
  

  • 12 oz Chickpea Pasta
  • Oil
  • 4 Tomatoes chopped (or 1 can diced tomatoes)
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • 1 tsp Oregano
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • 4 oz Spinach

Method
 

  1. Bring a large pot of water to a boil and season generously with salt. Cook chickpea pasta according to the package, drain, and set aside.
  2. Meanwhile, In a large pot, heat oil over medium heat. Add garlic powder and stir while cooking, until fragrant, about 1 minute.
  3. Add tomatoes and stir. Season with onion powder, oregano, salt, and pepper. Bring to a simmer and continue to cook until sauce has reduced by about one quarter, about 10 minutes.
  4. Add spinach and stir until wilted. Stir in pasta, serve, and enjoy!
