Method
- Preheat the oven to 350° F and line a cupcake tin with liners or grease lightly with butter, if desired.
- Blend all ingredients except chocolate chips in a blender or food processor.
- Fold chocolate chips into the batter and then pour evenly into prepared cupcake tin.
- Bake at 350° F for 30-35 minutes or until batter is cooked through and toothpick comes out mostly clean.
- Cool for 10 minutes and serve!
