Cilantro Lime Rice

Ingredients
  

  • 2 Tbsp Oil
  • 2 cups White Rice
  • 1 clove Garlic minced
  • 2 ½ cups Water
  • 1/2 tsp Salt
  • Zest from 1 Lime
  • Juice from 1 Lime about 2 Tbsp
  • ½ cup Fresh Cilantro chopped or torn

Method
 

  1. In a medium pot, heat the oil over medium heat. Add rice and cook while stirring until rice turns golden brown. Add garlic and sauté until fragrant, about 30 seconds more.
  2. Stir in water, salt, and lime zest. Bring to a boil, reduce heat, cover, and simmer on low for 15-20 minutes or until all liquid is absorbed. Turn off the heat and allow to rest for 10 minutes.
  3. Fluff with a fork. Stir in lime juice and cilantro. Serve and enjoy!
