Easy Lentil Vegetable Soup

Ingredients
  

  • 1 cup Green Lentils rinsed and picked over
  • Oil
  • 1 Onion diced
  • 2 cups Carrots diced
  • 2 Tbsp Ketchup Or Tomato Paste
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1 tsp Dried Parsley
  • 1 Tbsp Cumin
  • 64 oz Vegetable Stock or Water
  • 1 Tbsp Soy Sauce optional
  • Salt and Pepper to taste

Method
 

  1. In a large pot, heat 1 Tbsp oil over medium heat and add onions and carrots. Cook, stirring occasionally, until vegetables are soft and tender, about 4 minutes. Add the ketchup and a pinch of garlic powder and continue to cook for an additional 3-4 minutes or until ketchup is reduced a bit.
  2. Add remaining garlic powder, oregano, parsley, cumin, lentils, vegetable stock, and soy sauce. Stir, bring to a boil, reduce heat, cover, and simmer for 30-40 minutes or until lentils are cooked through. Season with salt and pepper to taste. Serve and enjoy!
