Eggless Tofu Scramble

Ingredients
  

  • Avocado Oil or Olive Oil
  • 14 oz Extra Firm Tofu crumbled
  • 2 Tomatoes diced
  • 1 tsp Garlic Powder
  • Salt
  • Pepper
  • 1 Tbsp Soy Sauce or Aminos
  • ¼ tsp ground Turmeric
  • 8 oz Fresh Spinach

Method
 

  1. Drain tofu, pat dry, and crumble with a fork.
  2. Heat a large sauté pan over medium heat and add oil. Once oil is hot, add diced tomatoes and season with garlic powder. Saute until juices are released from tomatoes.
  3. Add crumbled tofu, season with salt, pepper, soy sauce, and turmeric, and stir. Continue cooking until tofu is heated through, about 3-5 minutes.
  4. Add spinach and stir until spinach is wilted, about 3-4 minutes. Season to taste with more salt, pepper, and soy sauce. Serve and enjoy!
