Fried Egg and Hummus on Toast

(Optional Breakfast)

Ingredients
  

  • 4 Eggs
  • 1 Tbsp Butter or Oil
  • 4 Slices Baguette
  • 4 Tbsp Hummus
  • Spinach
  • Salt Optional
  • Hot Sauce Optional

Method
 

  1. Toast the baguette slices in the toaster or broil on low until toasty.
  2. Meanwhile, heat butter or oil in a medium saute pan over medium heat. Break eggs into pan, being careful not to break the yolks. Once the whites look cooked, flip and cook for an additional 2 minutes or until whites are completely cooked through and yolk is slightly runny.
  3. Spread 1 tablespoon of hummus on each slice of toasted bread and top with an even layer of spinach. Top with fried egg and season with salt or add hot sauce. Serve and enjoy!
