Italian Lentil Soup

Ingredients
  

  • 2 tbsp vegetable oil
  • 1/4 cup onion diced
  • 1 cup Frozen Veggie Mix
  • 1 1/4 cups lentils
  • 1 lb Potatoes peeled and diced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 tsp Garlic Powder
  • 1 14.5-ounce can Diced Tomatoes
  • 6-7 cups water
  • 1 cup Fresh Spinach about 1 handful

Method
 

  1. In a large pot, heat oil on medium heat. Add onions and sauté until soft and translucent.
  2. Add frozen veggies and lentils and cook for 1 minute. Add potatoes, salt, pepper, thyme, oregano, garlic powder, diced tomatoes and water. Bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until lentils are cooked through and potatoes are tender.
  3. Stir in the spinach, season to taste, and serve!
