Method
- In a large pot, heat oil on medium heat. Add onions and sauté until soft and translucent.
- Add frozen veggies and lentils and cook for 1 minute. Add potatoes, salt, pepper, thyme, oregano, garlic powder, diced tomatoes and water. Bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until lentils are cooked through and potatoes are tender.
- Stir in the spinach, season to taste, and serve!
