Lasagna Soup

Ingredients
  

  • Olive oil or Avocado Oil
  • 1 yellow onion diced
  • 1 lb Sausage or any ground meat or meat substitute
  • 1 tsp Italian Seasoning
  • 1 jar 24oz Pasta Sauce or Marinara sauce
  • 3 cups Chicken Stock or 3 cups Water with 2 Tbsp Soy Sauce
  • 6 Lasagna Noodles broken
  • 1/2 cup Parmesan finely grated
  • 1 oz 2 Tbsp Cream Cheese (or 1 Cup Mozzarella Cheese, shredded)

Method
 

  1. In a large sauté pan, heat olive oil over medium heat. Add onions and sauté until soft and translucent, about 3-4 minutes.
  2. Add sausage (or ground meat or meat substitute). Brown the meat, breaking apart as you cook, until cooked through.
  3. Add pasta sauce, Italian seasoning, and chicken stock and heat until bubbly.
  4. Add noodles and cook as directed on the package. (I cooked for 12 minutes for oven-ready lasagna noodles)
  5. Add Parmesan and cream cheese (or mozzarella), stir until melted.
  6. Serve immediately and enjoy
