Lentil Tortilla Soup

Ingredients
  

  • 1 Onion diced
  • 1 Bell Pepper diced
  • 2 cups Black Beans cooked
  • ¾ cup dry Lentils Green or Red
  • 1 cup Corn Canned, Fresh, or Frozen
  • 2 cups Chicken Broth
  • 1 28 oz can Crushed Tomatoes
  • ½ tsp Chili Powder
  • ½ tsp Cumin
  • ½ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • Optional Toppings:
  • Shredded Mexican Cheese
  • Greek Yogurt
  • Avocado
  • Red Onion diced
  • Fresh Cilantro torn or chopped
  • Sliced Jalapeno
  • Tortilla Strips or crushed Tortilla Chips

Method
 

  1. Add all ingredients to a pressure cooker, close, seal, and cook pressure cook for 15 minutes. Allow to natural release.
  2. Serve with any toppings and enjoy

Notes

This can also be made in a slow cooker by adding all ingredients and cooking on high for 4-6 hours or low for 7-8 hours.
 
It can also be cooked on the stove top by first sautéing the onions and bell pepper in oil, then adding the remaining ingredients and simmering on low until lentils are cooked through, about 30-40 minutes.
