Mediterranean Salad with Naan

Ingredients
  

  • 4 cups Spinach or 1 Head of Lettuce, chopped
  • ½ Cucumber chopped or thinly sliced
  • cup Olives diced
  • cup Feta Cheese
  • 1 Tomato diced
  • ¼ Red Onion diced
  • 4 pieces Naan
  • Dressing:
  • ½ cup Olive Oil
  • 1 tsp Dijon Mustard
  • Lime Juice
  • Salt
  • Pepper

Method
 

  1. In a small bowl, whisk together the oil, mustard, lime juice, salt, and pepper.
  2. In a large bowl, add the spinach, cucumber, olives, tomato, red onion, and feta. Toss with the dressing or serve with dressing on the side. Serve with Naan on the side.
