One Pot Chicken Quinoa and Veggies

Ingredients
  

  • 1/2 cup Quinoa
  • 2 cups Chicken or Vegetable Broth
  • 1 bag Frozen Mixed Vegetables
  • 1 cup Cooked Chicken
  • ½ tsp Salt or to taste
  • ¼ tsp Pepper
  • 1 tsp Garlic Powder
  • 1 Tbsp Italian Seasoning

Method
 

  1. Rinse the quinoa and add to a medium pot. Add chicken broth, frozen veggies, and cooked chicken, and bring to a boil. Season with salt, pepper, garlic powder, and Italian seasoning. Reduce the heat, cover, and simmer for 15-20 minutes or until quinoa is cooked through. Serve and enjoy!
