Quinoa Chili Casserole

Ingredients
  

  • 1 Tbsp Oil or Chicken Fat
  • ½ Red Onion diced
  • 2 cloves Garlic minced
  • 4-5 Tomatoes diced (or 1 can diced tomatoes)
  • 1 Bell Pepper diced
  • ½ can Black Beans
  • 1 can Corn
  • ½ cup Chicken cooked and shredded (Optional)
  • 1 cup Quinoa rinsed
  • 2 cups Chicken Broth
  • 1 Tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • ½ tsp Marjoram optional
  • ½ tsp Salt
  • ¼ tsp Pepper
  • Optional Toppings: Shredded Cheese Greek Yogurt, Avocado, Diced Tomatoes, Tortilla Chips, Hot Sauce

Method
 

  1. In a medium pot, heat the oil or fat on medium heat. Add the onions and saute until soft and translucent, about 3-4 minutes. Add garlic and continue to cook until fragrant, about 30 seconds more.
  2. Add tomatoes, bell pepper, black beans, corn, chicken (if adding), quinoa, chicken broth, chili powder, cumin, garlic powder, marjoram, salt, and pepper. Bring to a boil, reduce the heat, cover, and simmer for 20 minutes or until quinoa is cooked through.
  3. Serve with optional toppings and enjoy!
