Refried Black Beans and Rice

Ingredients
  

  • 1 cup Rice
  • 2 Tbsp Oil
  • 2 cups Black Beans cooked (or 1 can black beans, drained, liquid reserved)
  • 1 Avocado

Method
 

  1. Cook rice according to the package instructions. Set aside.
  2. In a small sauce pan, heat oil over low-medium heat. Add black beans and heat through. Mash with a potato masher or fork and add liquid, 1 tablespoon at a time, until you’ve reached your desired consistency. Add salt and pepper to taste.
  3. Divide rice and beans evenly onto 4 plates. Top with avocado and enjoy!
