Spinach and Quinoa Salad

Ingredients
  

  • 1/2 cup Hummus
  • 2 Tbsp Olive Oil
  • 2 Tbsp Water
  • 1/2 tsp Salt
  • 1 cup Quinoa cooked and chilled
  • 5 oz Spinach about 3 large handfuls
  • 1/2 Cucumber chopped
  • 1 Tomato diced
  • 1/2 Avocado chopped
  • Shredded Chicken Optional

Method
 

  1. Cook quinoa according to the package and chill in the refrigerator until cooled completely.
  2. In a small mixing bowl, combine hummus, olive oil, water, and salt. Taste and add more salt, if needed.
  3. In a large mixing bowl, mix together the spinach, cucumber, tomato, avocado, and hummus dressing. Serve and enjoy!

Notes

Season to taste once salads are portioned. Add salt and pepper or your favorite hot sauce!
