Turkey Breakfast Hash

Ingredients
  

  • 1 Tbsp Butter or Oil
  • 1 Onion diced
  • 1 Garlic clove minced
  • 2 cups Turkey cooked and shredded or chopped
  • Salt
  • Pepper
  • ½ tsp Chili Powder
  • ½ tsp Paprika
  • ½ tsp Cumin
  • 2 cups Stuffing
  • ¾ cup Gravy
  • 8 Eggs
  • Hot sauce optional
  • Cilantro chopped, optional

Method
 

  1. In a large pan, melt butter over medium heat. Add onions and sauté until soft and translucent.
  2. Add garlic and sauté until fragrant, about 30 seconds more. Add chopped turkey and season with salt, pepper, chili powder, paprika, and cumin. Stir and continue cooking until heated through.
  3. Stir in stuffing and gravy and continue to cook until heated through.
  4. Meanwhile, in a separate pan, melt 1 tablespoon of butter over medium heat and crack eggs into the pan. Fry the eggs on each side until yolks are cooked to desired doneness. Season with salt and pepper.
  5. Pour turkey mixture into bowls and top with fried eggs. Top with hot sauce and cilantro, if desired. Enjoy!
