White Bean and Chicken Soup

Ingredients
  

  • 2 Tbsp Oil
  • 1 Onion diced
  • 3 Carrots chopped
  • 1 Tbsp Tomato Paste
  • 1 tsp Cumin
  • 2 cups Chicken cooked and shredded
  • 4 Garlic Cloves minced
  • 1 Tbsp Fresh Ginger minced
  • ½ tsp Salt more to taste
  • 4 cups Chicken Broth
  • 4 cups cooked White Beans or 2 can White Beans
  • 2 cups Kale chopped (or spinach)
  • Fresh Lime or Lemon Juice to taste

Method
 

  1. In a large pot, heat oil over medium heat. Add onions and carrots and saute until soft, about 5 minutes.
  2. Add tomato paste and cumin and continue to cook while stirring until tomato paste darkens, about 1 minute more.
  3. Add cooked chicken, garlic, ginger, and salt and saute until garlic is fragrant, about 1 minute more.
  4. Stir in chicken broth and beans and bring to a simmer. Allow to simmer for about 10-15 minutes. Add kale and continue to cook until kale is wilted, about 10-15 minutes more.
  5. Turn off the heat, stir in lime juice, and serve!
