Zucchini and Pepper Grilled Cheese

Ingredients
  

  • 1 Zucchini sliced thinly into matchsticks
  • 2 Bell Peppers any color, sliced thinly into matchsticks
  • 2 Tbsp Oil
  • Salt to taste
  • Pepper to taste
  • Italian Seasoning to taste
  • 2 Tbsp Butter
  • 8 Slices Bread
  • 4 oz Feta Cheese crumbled

Method
 

  1. Heat a large pan over medium heat and add oil. Add zucchini and bell peppers and saute until cooked to desired doneness, about 2-3 minutes. Season with salt and pepper to taste. Remove to a bowl and set aside.
  2. Wipe out the pan, if desired, and add 1 tablespoon of butter. Place 2 slices of bread on melted butter and top one slice with a quarter of the zucchini and peppers. Top with 1 oz of Feta cheese and season with Italian seasoning, to taste. Top with the other slice of bread and cook until bread is toasted, about 1-2 minutes.
  3. Once crispy and toasted on one side, flip and continue cooking until the other side is toasted, about 1 minute more.
  4. Serve and enjoy!
