Ingredients

  • 1.5 lbs Chicken Breasts or Thighs
  • ¼ cup Low Sodium Soy Sauce
  • ¼ cup Ketchup
  • ¼ cup Honey
  • ½ Onion diced
  • 3 cloves Garlic minced
  • ¼ tsp Pepper
  • 2 Tbsp Oil - Olive Oil or Avocado Oil
  • 2 Tbsp Cornstarch optional, for a thicker sauce
  • 1 cup Rice cooked
  • 3 cups Broccoli cooked (or any veggies)
  • Optional Toppings hot sauce, sesame seeds, and green onions

Method

  1. In a resealable bag, place chicken, soy sauce, ketchup, honey, onions, garlic, pepper, and oil. Seal, label, and freeze for up to 3 months.
  2. When ready to cook, thaw overnight in the refrigerator. Once thawed, pour into a slow cooker and cook on low for 4-5 hours or until chicken is cooked through.
  3. Remove chicken and set aside. Stir the cornstarch into the sauce, cover, and continue to cook on low. Meanwhile, let the chicken rest for 5 minutes and then shred.
  4. Add shredded chicken back to the sauce and continue to cook until sauce thickens, about 15-30 minutes. The longer you cook it, the thicker the sauce will be.
  5. Serve with cooked rice, vegetables, and any optional toppings. Enjoy!
