5 Easy Freezer Meals | Budget Friendly Dinners

These are some of my favorite freezer meals that I make anytime I need to plan ahead for busy times. It’s so nice to be able to pull something out of the freezer that’s homemade and delicious. Some of these can be cooked from frozen and some do best when they’re thawed in the refrigerator overnight. I hope you love the recipes!

Chicken Pot Pie

This first recipe is one of my all-time favorite freezer meals. Not only is the recipe easy but it also makes enough for 2 whole pot pies and additional filling to eat for dinner or lunch the next day. Find the recipe here:

Slow Cooker Chicken Chili

This next recipe is comforting yet light at the same time. It’s a delicious take on chili that I’ve made several times recently because it’s THAT good. It’s the perfect chili for both warm and cold days alike.

Slow Cooker Chicken Chili

Total Time 4 hours 10 minutes

Servings 4 Servings

Ingredients
  

  • 1 lb Chicken Breasts or Thighs
  • 1 Bell Pepper diced (any color)
  • 1 Yellow Onion diced
  • 2 cups Fresh Tomatoes chopped (or 1 can Diced Tomatoes)
  • 1 15 oz can Chili Beans not drained (or black, pinto, white, or kidney beans)
  • ½ cup Salsa
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt optional
  • Optional Toppings Greek yogurt or sour cream, shredded cheese, diced onions, jalapeños, hot sauce, avocado

Instructions
 

  • Place all ingredients in slow cooker and stir until combined.
  • Set slow cooker to 4-5 hours on low or until chicken is cooked through to 165° F internally.
  • Once chicken is cooked through, shred and stir.
  • Serve with your favorite toppings like Greek yogurt or sour cream, avocado, shredded cheese, diced onions, jalapeños, hot sauce etc and enjoy!
  • To make ahead as a freezer meal, place all ingredients into a resealable bag and freeze. When ready to cook, thaw in the refrigerator overnight and then pour into a slow cooker and continue from step 2.

Honey Garlic Chicken

I’ve been making this honey garlic chicken for years and it never disappoints. This recipe can be made in the instant pot, slow cooker, or on the stove top.

Honey Garlic Chicken

Prep Time 10 minutes

Ingredients
  

  • 1.5 lbs Chicken Breasts or Thighs
  • ¼ cup Low Sodium Soy Sauce
  • ¼ cup Ketchup
  • ¼ cup Honey
  • ½ Onion diced
  • 3 cloves Garlic minced
  • ¼ tsp Pepper
  • 2 Tbsp Oil – Olive Oil or Avocado Oil
  • 2 Tbsp Cornstarch optional, for a thicker sauce
  • 1 cup Rice cooked
  • 3 cups Broccoli cooked (or any veggies)
  • Optional Toppings hot sauce, sesame seeds, and green onions

Instructions
 

  • In a resealable bag, place chicken, soy sauce, ketchup, honey, onions, garlic, pepper, and oil. Seal, label, and freeze for up to 3 months.
  • When ready to cook, thaw overnight in the refrigerator. Once thawed, pour into a slow cooker and cook on low for 4-5 hours or until chicken is cooked through.
  • Remove chicken and set aside. Stir the cornstarch into the sauce, cover, and continue to cook on low. Meanwhile, let the chicken rest for 5 minutes and then shred.
  • Add shredded chicken back to the sauce and continue to cook until sauce thickens, about 15-30 minutes. The longer you cook it, the thicker the sauce will be.
  • Serve with cooked rice, vegetables, and any optional toppings. Enjoy!

Slow Cooker Marry Me Chicken Pasta

Slow Cooker Marry Me Chicken Pasta

Cook Time 5 hours
Total Time 5 hours 10 minutes

Ingredients
  

  • 1 lb Chicken Breast
  • 1 ½ cups Chicken Broth or Water and Bouillon
  • 3 Tbsp Flour
  • ½ cup Heavy Cream or Whole Milk
  • 1 Tbsp Minced Garlic
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 1 Tbsp Italian Seasoning
  • 1 tsp Paprika
  • cup Grape Tomatoes seasoned with salt or ⅓ cup Sundried Tomatoes
  • 2 Tbsp Butter
  • 1 lb Pasta

Instructions
 

  • In a large resealable freezer bag, place all ingredients except for the pasta, seal, and freezer for up to 3 months.
  • When ready to cook, thaw in the refrigerator overnight. Place the entire contents of the bag into a slow cooker and cook on low for 5-6 hours or until chicken is cooked through. Shred the chicken and stir.
  • Meanwhile, cook pasta according to the packaging. Add cooked pasta to the slow cooker and stir until pasta is coated in sauce.
  • Serve and enjoy!
