It’s Zucchini harvesting time where I live and my neighbor was so generous to give me several giant zucchinis to enjoy. I used them in stir-fry, pasta, and simply sautéed them with salt and pepper, but my favorite use so far has been these awesome stuffed zucchini boats. With this recipe, you get all the deliciousness and comfort of a hearty, homemade meal with less guilt.
Low-Carb Stuffed Zucchini Boats
Ingredients
- 2 Large or 4 Medium Zucchinis
- 1 lb Ground Turkey or Ground Beef
- Olive oil
- Salt
- Pepper
- Italian seasoning
- Red pepper flakes
- 1 small Onion
- 1 Tbsp Chopped Garlic
- 1 6oz. can Tomato Paste
- 1 cup Water
- 1/2 cup Shredded Mozzarella Cheese
- 1 Tbsp Chopped Parsley
Instructions
- Preheat the oven to 375 degrees F.
- Cut the end off the zucchinis then cut them in half lengthwise. If the zucchinis are large, cut them again in half crosswise.
- Place zucchinis on a foil lined baking sheet and season with salt, pepper, and Italian seasoning to taste
- In a large sauté pan, heat olive oil on medium-high heat and add ground meat.
- Season meat with salt, pepper, and Italian seasoning and cook until browned.
- Add onions and garlic and continue to cook until meat is completely cooked through.
- Mix in tomato paste and water. Then season with Italian seasoning, red pepper flakes, salt and pepper to taste.

Bring to a boil, reduce heat, and simmer for 5 minutes

Spoon mixture into zucchini, top with shredded mozzarella, and cook for 25-35 minutes or until zucchini is cooked to desired doneness.
